Chicken in Ginger-Carrot-Coconut Purée

- 5 cups baby carrots
- ½ c. Ginger
- 2 white onions (yellow ok)
- 1 orange
- I can of coconut milk
- 2 c. chicken broth
- Extra virgin olive oil
- cumin, cinnamon, nutmeg
- salt & pepper to taste
- 5 chicken breasts
- 1. Cut chicken into cubes and season with salt & pepper
- 2. Heat about 2 tbsp. Olive oil in pot and add pollo.
- 3. Saute until the pollo is golden & thoroughly cooked. (SET ASIDE AND COVER W/LID).
- 4. Chop roughly two onions.
- 5. Peel the ginger and chop into small pieces, you should have 1/2 cup.
- 6. Add onions and ginger to pot until the onions start to turn brown. Add 1 tsp of cinnamon and 1 tsp of cumin and mix.
- 7. Pour chicken broth to pot and stir for one minute.
- 8. Chop carrots into small pieces and add to pot until soft.
- 9. Add one can of coco milk, mix well and turn off heat and set aside.
- 10. Peel orange and ch0p into small pieces, add it to the pot. Once mixture in pot cools a bit, use food processor to make a pure.
- 11. Add pollo into pot and season with salt and pepper.
- 12. Add a dollop of sour cream, a dash of nutmeg and chopped green onions for a garnish.
- 13. Can make Basmati rice as a side dish. (enough for 6 people)
