1 stick butter
3 onions diced
4 anaheim pepers diced
3 cloves garlic minced
4 skinless, boneless chicken breasts
2 quarts chicken stock
2 28 oz. cans diced tomatoes with juice
1 28 oz can pureed tomatoes
salt & pepper to taste
2 tsp. Ground Cumin
Garnishes: cilantro, tortilla chips, cheese, avocadoes

Place butter in a stockpot and heat until it bubbles (do not brown). Add onion, peppers (add ½ of seeds from one Anaheim), garlic and chicken. Saute until onions are translucent. Add remaining ingredients, salt and pepper to taste. Stir well. Add cumin, Cook 30 min. Serves 12 people.
