Easy to Make Recipes

Everyone adores this simple recipe and best of all it's easy on the cook. All you need is a toss salad to accompany it. I serve mine with Picante Sauce! To start, you'll need:

 

1 cup finely ground unsalted tortilla chips
1 cup finely ground flaked wholewheat cereal (Nutri-grain)
1 package taco seasoning mix (1 and 1/4 oz-) I prefer spicy
2 egg whites
24 oz of boned, skinned chicken breast, cut into strips (can use whole)
1 and 1/2 Tbsp melted margarine
1. Grind the tortilla chips and the cereal together in a food processor. Place the crumbs in a flat dinner plate. Mix the taco seasoning into the crumbs.
2. Beat the egg whites with a fork until they are foamy.
3. Dip the chicken strips into the egg whites and then into the crumbs.
4. Place on a jelly roll sprayed with Pam.
 
After all of the chicken strips are coated, drizzle with the margarine. Bake in a preheated 350 degree oven for about 18 minutes until chicken strips are golden and crispy. Serves 6.
